Doctors and dietitians have time and again stressed that food high in zinc and vitamin C should be consumed to boost immunity against coronavirus and this soup is replete with these nutrients.Three vegetable creamy paneer soup is easy to prepare and you will only need a handful of ingredients to make this delicious as well as nutritious recipe. In case you are a non-vegetarian, you can replace the sautéed paneer cubes with chunks of boiled chicken.INGREDIENTS1 bowl of diced carrot1 bowl of diced beetroot1 bowl of diced tomatoPaste of 3-4 cloves of garlicHalf tbsp of mixed herbsSautéed paneer cubesJuice of half lemonHOW TO MAKEBoil the diced carrot, tomato and beetroot in a pressure cooker and blend the vegetables into a smooth paste. In a non-stick pan, add a tablespoon of olive oil and add the garlic paste and sauté it for a minute. Pour the blended vegetable paste into the pan. Mix water to get the desired consistency. Add mixed herbs and salt according to your taste.
